Most of the clients I work with are looking for healthy, fast, and easy to prepare foods that address the secondary complications associated with their SCI. I guarantee that this black bean spread not only does all that but you’ll love it!

Simple to prepare in under 5 minutes, this non-cook “Love Bean Spread” recipe will keep in the fridge for up to 5 days and can be served as a variety of meals, side dishes or snacks throughout the day. Spread it on whole grain toast for breakfast, serve on a whole grain wrap with shredded carrots for lunch, use as a dip with your favorite veggies as an afternoon snack or dollop on a grilled chicken breast with dinner.

This deliciously smooth spread is; rich in protein, carbohydrates and B-vitamins to support nerve function and energy production; loaded with fibre and magnesium to help maintain regular bowel routines; and serves up a good supply of immune boosting nutrients to help fight off nasty infections.

So treat yourself throughout the year by spreading a little love!

 

Love Bean Spread

Ingredients:

  • 1 large can black beans

  • 1large avocado

  • ¼ cup tahini

  • ¼ cup fresh lime juice

  • 1 clove garlic

  • 1 tsp cumin

  • pinch sea salt

  • 1-2 tbsp water

Directions:

1. Combine all ingredients together in blender until smooth
